I prefer a thicker tempura/breading coating, what can I do?
For a thicker coating, roll the ingredients into the dry mix first, then dip into batter.


What can I do for a more even tempura/breading coating?
Prepare ingredients by drying thoroughly before dipping into batter for a more even coating.


What can I do for an extra crisp tempura/breading coating?
It is important to start with preheated oil. Oil is ready when a drop of batter sinks immediately and returns to the surface. If the oil smokes, it is too hot. Fry only a few ingredients at a time to maintain oil temperature. For an extra crispy coating, you can double fry. Follow directions for first fry, then cool and refry 30-60 seconds.


How can I make an extra crisp chicken with Bake & Fry Coating Mix?
Moisten the chicken in liquid. Coat moistened pieces with Bake & Fry Coating Mix and let rest at least 30 minutes in the refrigerator. Coated pieces can be stored overnight in the refrigerator in a covered container. Remove pieces, moisten and coat again. Bake as directed on package.


How can I tell when the product is ready to remove from the fryer?
Frying times depend on ingredient thickness. Chicken is well done at an internal temperature of 180ºF and pork at 165ºF. Fish is done when it flakes with a fork. Vegetables are a personal preference depending on if you prefer crisp or tender pieces. Avoid overcrowding the fryer to insure even cooking.


What is the shelf life of your coating and batter mixes and how should I store them?
The key is proper storage. We recommend storing flour mixes in a cool (70ºF or below), dry environment. It is best to use the mix within a two-year period. The mixes do not contain any perishable ingredients.
